Re: the paleo diet and UC?

Well, when I developed UC symptoms, I tried EVERYTHING to get well again. My husbad even bought me Heather's book since I also had IBS issues. For me, her diet did not help me. I realize now it was because of the allowances of bread and other high sugar/carb foods that actually made my symptoms worse.

From reading up a little on the Paleo diet, it seems to be a lower carb, whole foods diet, similar to a phase one, low carb diet (antifungal diet) I experimented with and got well. Sugar, breads, grains feed yeast/fungus, while fungus can't survive with a low carb diet, as outlined in medical journals. So, if one's condition has a fungal etiology (which I am sure now mine did), a paleo diet would be beneficial for yhem. I have also since realized I am yeast intolerant...bloating, gas, and D if I take in too much in a short period of time. Yeast, in some form, is in a lot of processed, packaged foods, so I need to be careful what I eat and read all labels.

Since UC has been known to have a fungal etiology (often from previous antibiotic intake, birth control pills, living in a water-damaged/moldy home, steroids, consumption of grains/peanut products- both commonly contaminated with aflatoxins), it may behoove one to experiment with said diet for a few weeks to see if one does feel better. Wouldn't it be great to finally know the cause.
