I had UC for 8 years, and tried everything to get well again, including the Eating book. Symptoms did not let up. Came to realize on my own ( with no help from my GI's) that fungus (not just yeast)can be a cause of UC symptoms, especially if one has ever taken antibiotics, birth control pills, been exposed to a moldy, damp environment at work or home. So, I went on an antifungal diet, took natural antifungals, along with probiotics (highly recommend the probiotics) and got well again, now symptom and med free. I still have IBS tendanciesw. so I choose to limit grains and white or processed sugars.Yeast is a big trigger (again, realized through trial and error on my own) for me so that was another reason the Eating book did not help me....bread is allowed on that diet.
