Sounds like your UC had a fungal etiology. I also got well by following an antifungal program. The prescription drugs just masked my symptoms...kinda like putting tape over the engine light in your car so you can't see it anymore. The problem is still there, however!! I agree that drugs are needed to help you get over the hump of your symptoms, but there is no exit strategy with them. There never will be as long as the pharmaceutical companies are hand in hand with the medical schools and doctors. They only know how to hand our prescriptions. I also had my doctor tell me that changing my diet would not make any difference, I was wasting my time. And when I did get well again, he had the gall to say it was just a coincidence. Imagine. I haven't been back to see him since, and am trying to maintain my antifungal program somewhat so I will never have to again. Good for you in getting better. I agree that if one is not getting better with the current strategy your doctor has laid out, maybe it is time to change something. If you always do what you've always done, you'll always get what you've always gotten. Best to all as you try to find the "thing" that works for you. Don't give up!
