cooking light guacamole

I hate guacamole but I thought I should post this.
Guacamole

This simple dip is a favorite at Mijita. Lime juice, onion, cilantro, and cumin lend the creamy avocado lots of flavor.


1 cup finely chopped onion
1/4 cup minced fresh cilantro
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
2 ripe peeled avocados, seeded and coarsely mashed
12 ounces unsalted baked tortilla chips

Combine first 7 ingredients, stirring well. Serve with chips.

Yield: 16 servings (serving size: 2 tablespoons guacamole and about 10 chips)
