3 tbsp soy/rice milk 1/2 tsp salt 1/2 tsp paprika 1/2 cup Egg Beaters or 4 egg whites 6 cooked potatoes, riced or mashed dry 1/4 cup grated soy cheese (Cheddar or Swiss) 1/2 cup "buttered" crumbs (Mix 1/2 cup dry plain breadcrumbs and 1 tbsp melted soy margarine with a fork until well blended)
Add milk, seasonings, and eggs to hot potatoes. Beat until light and arrange in greased (sprayed) casserole dish. Cover with cheese, then crumbs. Bake in hot oven (400 degrees) 10 minutes, or until crumbs are browned. Serves 6.
