Another one of my great-grandmother's Lebanese recipes, this is really more like a dip than what we know as a "salad", but would be served with warm pita bread as a side dish.
8 small zucchini, peeled and chopped 1 medium onion, chopped 2 tablespoons olive oil (decrease to 1 tbsp) ½ cup lemon juice 1 teaspoon salt ¼ teaspoon pepper ½ teaspoon dried mint
Saute onion in olive oil until nearly brown. Add zucchini, cover, and simmer 30 minutes until mixture is very soft and can be easily mashed. Stir often.
Let cool, mash, add lemon juice and seasonings. Serve cold on shallow dishes, to be dipped with bread. Serves 6.

My great-grandmother was a hoot. She was born in Beirut, and barely spoke any English... in fact, the only thing she ever said that I understood, as a kid, was, "You too skinny!" and then she'd yell at my grandmother, "Give the girl food!" Haha.
Anyway, glad you're enjoying! Hehe. I have about 100 of the old recipes. A lot of them aren't safe, but they're all SO good.
