Orange Juice Pancakes

1 cup flour
3 tsp baking powder
1/2 tsp baking soda
1 tbsp sugar (optional, I used it)
1 cup orange juice
1 tbsp oil
1 tbsp applesauce

Whisk together the dry ingredients. Whisk together the wet ingredients in a separate bowl, then whisk to combine. Batter will still be a little lumpy. Drop by 1/4-cupfuls onto preheated nonstick pan coated with cooking spray. Watch them carefully - they don't "bubble" like normal pancakes do.

These are flattish (not fluffy) pancakes with a delicate orange flavor and color. I actually cut the OJ in half with water, because I'm really not an orange-juice person, and they were still tasty - I topped with Tropical Fruit Medley baby food (Gerber) and a drizzle of honey. Yum! Modified slightly from a VegWeb recipe.

Edit: I forgot to mention that this made 9 pancakes for me. Also, I found that if you make the batter and refrigerate it for an hour or so (I had mine, then cooked the rest when the boyfriend woke up), they *do* bubble like normal pancakes, and do end up a little fluffier. Just a thought.

This was my lunch for today. They're very yummy, although I do have to say, mine "bubbled" like regular pancakes. Did I do something wrong??

I meant to add to the recipe that mine DID bubble like normal pancakes, too... but I had just copied the recipe directions from the original, and I *did* modify the recipe, so maybe that had something to do with it.

Hi there,
Your recipe sounds very interesting as I always wanted to make orange pancakes. Now we dont get applesauce so is it OK if I use purres apples? Or do I leave the applesauce out?

You can actually leave the applesauce out, and it should be fine. You may want to put in an extra tablespoon of orange juice, just to make sure the batter is liquidy enough.
