Sweet and Sour Meatballs

This is something my mom always made when I was growing up... I just modified it to make it IBS-safe. (Well, it's safe as long as you can do pineapple... but I can, so...)

Sweet and Sour Meatballs
serves 4

1 lb ground turkey
1/2 cup dry bread crumbs
1/4 cup soy milk
2 tbsp finely chopped (or coarsely grated) onion
1 tsp salt
1/2 tsp Worcestershire sauce
2 egg whites or Egg Beaters to equal 1 egg
1/2 cup packed brown sugar
1 tbsp cornstarch
1 can (13 oz) pineapple chunks in juice
1/3 cup vinegar
1 tbsp soy sauce
1 small green pepper, coarsely chopped (I always omit this)

Mix together the ground turkey, crumbs, soy milk, onion, salt, Worcestershire sauce, and egg whites. Shape into 20 balls. Cook in a large skillet over medium heat, turning occasionally, until browned, about 20 minutes. Remove meatballs, and if there's excess fat in the skillet (there shouldn't be), drain it off (but leave any brown bits!).

Mix brown sugar and cornstarch in skillet. Stir in pineapple with juice, vinegar, and soy sauce. Heat to boiling, stirring occasionally; reduce heat. Add meatballs. Cover and simmer, stirring occasionally, for 10 minutes. If using green pepper, stir into mixture, cover, simmer until crisp-tender, about 5 minutes. Serve over rice.

Sounds wonderful! I've been looking for a good meatball recipe. Thanks! (my favorite has both ground pork and ground beef in it, don't think I can use ground turkey in place of both. Plus, the ground pork is part of the flavor. )

Are you looking for a good meatball recipe in general? Like something you can put in tomato sauce? This one is pretty good, but it is a little plain seasoning-wise (which is why it works so good in a sweet and sour sauce). Some of the BEST meatballs I've ever had were actually made with turkey! My father bought them somewhere... they were herbed with basil and oregano and had parmesan cheese in them, too. SO tasty!

To put in sauce, I would make the meatballs from the recipe above, but use Italian seasoned breadcrumbs instead of plain, and add a teaspoon of basil, 1/4 tsp pepper, and maybe 1/4 cup or so of soy parmesan.
