I like to make ginger cookies, but it calls for 3/4Cups butter. How can I subst. and reduce the fat?

Eek... I'm not sure what to tell you, Barb. You can use soy margarine and replace about 1/2 cup of it with applesauce... but that would probably drastically change the consistency of the cookies. Honestly, I've never had luck making my favorite cookies low fat... I've just had to find other low fat recipes to replace them.

How about gingerbread muffins instead? These are FABULOUS! But you don't need the lemon glaze; I like the taste of the gingerbread "au naturel."

Fat Free Ginger Cookies

1/4 cup unsweetened applesauce
1/2 cup white sugar
1/4 cup firmly packed brown sugar
1/4 cup light molasses
1/2 cup egg substitute (or 4 egg whites)
1-1/2 cups all-purpose flour
1/2 cup whole wheat pastry flour (I'm sure you could just use another 1/2 cup white)
1/4 teaspoon salt
2 teaspoons baking soda
1 teaspoon cinnamon powder
1 teaspoon ground clove
1 teaspoon ground ginger

Preheat the oven to 350 degrees. Whisk egg substitute into applesauce, sugar, brown sugar and molasses. In another bowl combine and sift dry ingredients together. Fold dry ingredients into wet ingredients. Let dough rest in the refrigerator 30 minutes or longer before baking. Spray cookie sheet with nonstick spray and place a tablespoon of dough 2-inches apart on the baking sheet. Bake 10-12 minutes until lightly browned at 350 degrees. Longer baking time yields crunchier cookies.

*Applesauce and egg substitute are used to replace the fat in this recipe. Then end product is great tasting cookies that are fat and cholesterol free.

Makes 36 Servings
Serving Size: 1 cookie

Saturated fat: 0 grams
Cholesterol: 0 mg
Sodium: 86 mg
Carbohydrate: 11 grams
Protein: 1 gram
Dietary fiber: 0 grams

I can't wait to bake these tomorrow. The only thing I'll do different is cut back on the sugar. I always do this with recipes. Plus I'll try my new surgrum syrup - I just love the flavor.
