Tomato and Olive Penne

I believe this recipe came from Martha Stewart. It serves 4. Prep time: 25 minutes. The cherry tomatoes cook just long enough to bring out their juice, which blends with the garlic-flavored olive oil to make it one of the best-tasting pasta sauces.

TOMATO AND OLIVE PENNE

1 pound penne or other short pasta
2-3 tablespoons olive oil
2 garlic cloves, thinly sliced
2/3 pound cherry tomatoes (2 cups), halved or quartered
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup Kalamata olives, pitted and sliced
1/4 cup chopped fresh parsley
1/4 cup grated soy Parmesan
(plus more for serving)

In a large pot of boiling salted water, cook penne according to package instructions until al dente, about 13 minutes. Drain.

Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the garlic, and cook, stirring, until just golden, about 1 minute. Add the cherry tomatoes, oregano, crushed red pepper, salt and pepper. Reduce heat to low, and cook, stirring, until tomato juices run, about 3 minutes.

Add the penne, olives, parsley, and 1/4 cup Parmesan to the skillet; toss to combine. Serve with more cheese, if desired.

Yum! I have to find this soy parmesan somewhere, it's in so many recipes! I tried one health food store and they didn't have ANY soy cheeses! I live in a small town near Peoria, IL (Ha- as if anyone has even heard of Peoria!....have they?), but hopefully I can find a bigger health food store somewhere.

I've heard of Peoria! And not just because I see it below your picture with every post you make, hehe.

Don't feel *too* bad... the only soy cheese I can find here, at least so far, is slices. No parmesan, no cheddar, etc. I do still have one more HFS to check, though...

Oh my gosh you've heard of Peoria!
Do you watch football at all? Brian Urlacker's (Linebacker for the Chicago Bears) brother lives in our apartment complex! So Brian comes here all the time....my husband is OBSESSED. He has a Urlacker bobble head and he wants to use me as bait to get Brian to come over. Haha.
I don't know why I just told you that - maybe to say, 'hey Peoria isn't that bad - we have hot football players!'

I'm so glad you enjoyed it. Frankly, I don't even remember this recipe! I've never made it, and don't recall posting it. Oy.

I buy mine online @ Veganstore.com http://www.veganstore.com/index-store.html?deptid=17117&parentid=39&stocknumber=234&page=1&itemsperpage=12
because it's hard to find here too. Last time I just bought 4 of them, because you have to pay shipping, then you have some for awhile. I like the Vegan Parmesan Alternative one the best!
