Apricot-glazed chicken (oh, yeah!)

Serves 4
Prep time: 10 minutes
Cook time: 10 minutes

2 cups rice, uncooked
salt and black pepper, to taste1
4 chicken breasts
2 tsps olive oil (i used cannola)
1/2 cups sliced fresh apricots (about 4-6 large)
1/3 cup apricot preserves
1 Tbsp hoisin sauce
1 Tbsp soy sauce

Cook rice as directed on box.

While that cooks, salt and pepper the chicken. Heat oil in a large skillet over med-high heat. Add chicken and cook 2 minutes per side, 'til golden.

Add remaining ingredients and bring to a boil. Reduce heat to low and simmer 5 minutes, until chicken is cooked through and sauce is thick.

Serve over rice.

Oh Boy Jen, this does look good....and easy.....bet you could do the same with peaches instead of apricots.......also add a few slivered almonds on top..........yum...
