Crockpot Chicken Paprikash

Crockpot Chicken Paprikash
(Makes 4 servings)

I love my Crockpot... and this is one of the most flavorful Crockpot recipes I've tried!

Ingredients:
1 1/2 cups water
4-5 lbs boneless, skinless chicken breasts
1 cup canned tomatoes (I use diced)
1 green pepper, chopped (I only use about 1/2 a pepper)
1 small onion, sliced
2 Tablespoons paprika (I use about 1 1/2 Tbsp)
1 clove garlic, minced
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 cup all-purpose flour
1 cup plain soy yogurt

1. Put the water, chicken, tomatoes, green pepper, onion, paprika, garlic, salt, pepper and oregano into the crockpot.
2. Stir to blend.
3. Cover the pot and cook on low for 9 to 10 hours until chicken is tender.
4. Remove chicken from the crockpot and skim fat from the remaining sauce.
5. Remove 1/4 cup liquid from the crockpot and allow to cool a bit.
6. Blend flour with the 1/4 cup cooled juices and return the flour mixture to the liquid in the crockpot.
7. Mix well and stir until thickened.
8. Blend in soy yogurt.
9. Return chicken to the pot and allow to heat through, but do not boil.
10. Serve on cooked noodles if desired. The sauce is also great on mashed potatoes!

Kree,

What would happen if you didn't use the soy yogurt? I'm hypothyroid...so I stay away from soy

Would it work?? Or ruin it?

Hmm... well, the soy yogurt thickens it up and makes it creamier, so the sauce might be a little thin. I suppose you could try using some extra flour or cornstarch to make it thicker that way! I'm not sure how it would work but you could give it a try! I'm sorry you can't have soy, Steph... that must be annoying.

yep it is annoying that I can't have soy. Oh...well! NO biggie!

Maybe I'll try the cornstarch...and flour!

I was just thinking, maybe a little bit of rice milk to give it that creamy taste would be good too... with the extra thickeners.

Kree,

Do you think this recipe would cut in half okay? 4-5 lbs is a lot to make for us, but I really want to try this. Think I could use about 1 lb (4 breasts)?

Looking at the ingredients, I don't think there's any way it could be 4-5 lbs. I think she probably meant 4-5 chicken breasts.

Now that I look back over the rest of the ingredients, that makes sense....that and the fact I just noticed it says 4 servings! I don't think 1 lb would be a serving! LOL

4-5 lbs is what it said on the original recipe, but I'm pretty sure I used about 1 1/2 lbs when I made it... which was probably about 4 big breasts. That's what I usually buy. So I'm pretty sure it works! If I remember correctly it made a lot of juice that way, which is good!

I have to admit though that I "cheated" and used boneless skinless thighs instead, but I did fine and I'm thrilled! But I'm sure it would be great with the breasts as well. I loved the "creaminess" of the sauce....YUM!!!

Lunch leftovers were great also. I put the rest in the freezer for a dinner for next week.
