Veggie Burgers

Hi - Here's a make-your-own burger recipe. Haven't tried it yet, tho.

Veggie Burgers
makes 4 servings, 2 pts ea

1 tbsp canola oil divided
1/4 cup EACH minced onion, green bell pepper, carrot and celery
2/3 c drained canned white kidney (cannellini beans)
1 egg white or 1 egg beater, slightly beaten
1/3 c seasoned bread crumbs

1. In 8" nonstick skollet heat 1 tsp oil. Add onion, pepper, carrot and celery. Cook over med heat, stirring occas, until veggies are soft and moisture has evaporated, about 1 min. Set aside and cool slightly.

2. Using a fork, in a med mixing bowl mash beans, stir in egg, add bread crumbs and veg mixture. Mix til thoroughly combined.

3. Shape mixture into 4 equal patties. Set patties on plate, cover and refrigerate until chilled, at least 20 min.

4. In same skillet, heat 1 tsp of oil. Add 2 patties, cook over med heat, turning once, until browned on both sides and heater thru. Remove patties to plate, keep warm. Repeat with remaining patties.

I've tried these - they're nice.

Grate 3 medium peeled potatoes, 8 ounces pumpkin, 1 large peeled carrot, 1 small peeled zucchini into a large bowl.

Add 1 small chopped onion, 5 egg whites, 1/3c flour, 1 t baking powder, 1t salt and 2t mixed herbs and mix well.

Lightly spray non stick pan and spoon mixture into non-stick egg rings.

Cook 4 min then turn and cook for a further 5-8 min.

Makes 12

Angela - I think any cooked beans are okay as long as they're mashed up. I eat refried beans FF all the time and put it in my soups to thicken them up. As long as you get the shell of the bean into small pieces, it should be okay. The inside of the bean is soluble fiber, the outside shell is insoluble. Just make sure it's smooshed.
