Sausage & Rice Skillet

This recipe is from Campbell's Kitchen.

SAVORY SAUSAGE & RICE SKILLET

1 lb. sweet Italian turkey sausage, cut into 1-inch pieces
1 cup sliced celery
1 large onion, chopped
1 medium green pepper, cut into 2-inch strips
1 medium red pepper, cut into 2-inch strips
3 cloves minced garlic
1 teaspoon dried thyme, crushed, or 1T chopped fresh thyme
1 cup uncooked regular brown rice
1/2 cup uncooked wild rice
3-1/2 cups chicken broth (preferrably home made)
2 tablespoons chopped fresh parsley

Cook sausage in large non-stick skillet until browned. Add celery, onion, peppers, garlic and thyme, and cook until vegetables are tender. Add rice and broth. Heat to a boil. Cover and cook over low heat 45-mins. or until rice is done. Stir in parsley.

Serves 6.

I made this last night for dinner!! VERY GOOD!!

I did the following.....
*used chopped green, red, & yellow peppers (about 1-1/2 cup total)
*fresh thyme
*fresh cilantro (chinese parsley)

SHANE'S REVIEW: Well, I went back for seconds so that is a good sign, this is re-doable!!

I'm going to make this again tonight but use Jennio Turkey Kelbasa instead... have not decided if I will (should) remove the casing or not?.... I'll report back in after it is all said and done.

OK, I used it with the skin on (no problems so far).....I also added so chopped mushrooms I had left over and used basmati rice in place of brown BIG MISTAKE.... it was mushy... bad call on my part.... oh well, live and learn.... Shane said it was good and ate all of his...(I think he was just hungry)....I only ate about 1/2 of mine...the texture just was not my thing.....

This is REALLY yummy! I made a few changes due to availability and it worked so thought I would record it.
This recipe is from Campbell's Kitchen.

SAVORY SAUSAGE & RICE SKILLET

1 lb. sweet Italian turkey sausage, cut into 1-inch pieces I used 8 turkey sausages; chicken sausages would be fine here too..just normal bangers

1 cup sliced celery
1 large onion, chopped
1 medium green pepper, cut into 2-inch strips
1 medium red pepper, cut into 2-inch strips
3 cloves minced garlic I decreased to 1 cloves as my tummy isn't crazy about garlic
1 teaspoon dried thyme, crushed, or 1T chopped fresh thyme
1 cup uncooked regular brown rice ie the one that takes ages to cook, the express ones won't work
1/2 cup uncooked wild rice I used all brown rice
3-1/2 cups chicken broth (preferrably home made) I used chicken stock made from an MSG free stock cube- 500 ml
2 tablespoons chopped fresh parsley

Cook sausage in large non-stick skillet until browned. I used my biggest saucepan. the sausage WILL stick to the saucepan so if its not non stick better use some cooking spray Add celery, onion, peppers, garlic and thyme, and cook until vegetables are tender. Add rice and broth. Heat to a boil. Cover and cook over low heat 45-mins. or until rice is done. Stir in parsley.

I highly recommend this, the house smells fantastic when its cooking, its filling and very tasty!

DH definitely wants it in the "regular rotation". I use long grain white rice as we aren't big brown rice fans- but YUM!

Isn't this NOT safe?
I have never seen chicken/turkey sausage that wasn't well in excess of 25% fat or more.

I was thinking the same thing. I found this recipe yesterday that calls for chicken sausage and I wasn't able to find any sausage that wasn't high in fat. What I'm doing is making my own sausage out of lean ground turkey and adding all the necessary spices to make it taste like sausage. I've never done it before and I'm sure it won't be as good as regular sausage because it won't have all the fat but I'm sure it'll still be good. I'm actually making this dish called pasta with italian chicken sausage, peppers and escarole for dinner tonight. If it turns out good I'll post it tomorrow.
