Sharon, dearest (or anyone else!). You have those amazing books of bread machine recipes. Do you have any that uses dehydrated vegetable flakes? Or spinach? I need to incorporate more veggies into my diet, as well as Liam's (my 19 month old son). Any suggestions?

Here's one for Spinach Bread. You could probably just sub soy cheese for the cheddar. Everything else looks safe. I haven't tried it, but it got pretty good reviews. If you try it, let us know how it came out!

I made this yesterday, and it's pretty good (I subbed rice cheese), but my bf and I both think it could use more spinach. If I increased the spinach to 1 cup or 1 1/2 cups, should I reduce any of the other ingredients?

I don't think so... personally I'd leave everything else the same. Anyone else have a thought?

i DON'T think so. I wouldn't increase it more than a cup though, it might change the consistency. Make sure it's well drained of water or you might end up with spinach mush lol!

Here's the recipe in case that link ever stops working:

Spinach Bread
Yields: 15 servings

INGREDIENTS:
1 cup water
1 tablespoon vegetable oil I used olive oil.
1/2 cup frozen chopped spinach, thawed and drained
3 cups all-purpose flour
1/2 cup shredded Cheddar cheese I used rice cheddar.
1 teaspoon salt
1 tablespoon white sugar
1/2 teaspoon ground black pepper
2 1/2 teaspoons active dry yeast

DIRECTIONS:
1. Place all ingredients in bread machine pan in the order recommended by the manufacturer. Select white bread cycle.

This bread was so incredible!!! I can't believe I waited so long to try it. I made it yesterday, and we had it with dinner last night. Hubby says it's his favorite bread I've made in the bread machine.

I'm having a toasted rice cheese sandwich for lunch today on it. I know it will be awesome!

I love that I'm sneaking some extra veggies in too! hehe

I made this on 1.5 lb loaf and medium crust.
