I had this for dinner tonight, very filling, reminded me of oatmeal. I subbed a few broken up frozen peaches for the apple, it was still yummy. I may add more cinnamon or something else to give it a little more flavor next time, but that's personal preference
1/3 cup quinoa 2/3 cup water 1 tsp cinnamon or apple pie spice 2 tsp sugar or honey 1/2 Granny Smith apple, chopped into small pieces
Rinse the quinoa well in cold water. Place in a saucepan with the water, sugat, and apple pie spice. Bring to a boil, cover, and simmer while you are preparing the apple. Add the chopped apple and continue to simmer until all the liquid is absorbed (took me about 15-20 minutes).
