Favorite rice recipes needed.....

After having some very bad days recently and after taking a body fat test at the local health fair last weekend and being in the "fair" category of percentage (24%), I've decided to reduce my calorie and fat intake and try to firm up my muscle tone a bit. So, I'm trying to eat more rice, etc and need some ideas.....I'm not much of a rice person. Today for lunch and last night for supper, I had some homemade smoked trout in rice. It wasn't bad, but not something I'd crave either. What else can I do that is quick and easy. I've not yet tried Wills rice pudding, but am going to. Just never taken the time to make it.

Lemon Rice Pilaf new

Here's a rice recipe my family really enjoys.

Lemon Rice Pilaf
(Makes 6 cups)

1 cup yellow onion, diced
1 1/2 cups converted rice
3 1/2 cups water
1 Tablespoon soy margarine
2 teaspoons kosher salt
1 bay leaf
1/4 teaspoon cayenne (optional)
zest of 1 lemon, minced
juice of 1 lemon

1. Saute onion in small amount of canola oil in a large saucepan just until softened.
2. Add rice and continue sauteing until it starts to turn golden.
3. Stir in water, margarine, salt, bay leaf, and cayenne.
4. Bring to a boil, cover, and reduce heat to low.
5. Cook until liquid is absorbed, 20 minutes.
6. Remove from heat.
7. Stir in lemon zest and juice.
8. Allow rice to steep a few minutes before serving.

Note: You can also add in a little bit of minced garlic at the end of cooking. The flavor goes really well.

Here's another idea:

Cranberry Pilaf
(Makes 4-6 servings)

1 Tablespoon soy margarine or canola oil
1/2 cup minced onions
2 Tablespoons chopped fresh parsley
2 chicken bouillon cubes (make sure they don't contain dairy or MSG)
2 cups boiling water
1 cup raw rice
1/2 cup chopped cranberries

1. Melt margarine in a covered saucepan (or add oil); saute onion until transparent.
2. Add parsley.
3. Combine bouillon cubes and boiling water.
4. Add to onion and parsley.
5. Stir in rice; bring mixture to a boil.
6. Add cranberries.
7. Simmer, covered, for 25 minutes or until liquid is absorbed.

That's not a dumb question! I had to look that up the first time I tried this recipe too.

I guess it has to do with the way the rice is processed. The converted rice somehow keeps more of the nutrients. Here are a couple of pages about it:

web page Here is a link to my favourite rice recipe. It's ridiculously easy and yummy. I often serve it when I have a crowd. Makes a great company dish but easy enough to serve everyday. I can't say enough about it. It's a lifesaver for me.

I think raw rice just means it hasn't been precooked. But yes, I do use long-grain for that recipe, personally.
