Serves 2

2 Salmon fillets
2 teaspoons Olive oil
2 teaspoons dried Basil
3 cloves garlic
1 lemon

Preheat oven to 180C (350F???).
Chop (or mush) the garlic.
Mix in a small bowl with the basil and olive oil.
Spread over the salmon fillets.
Put in fillet in the middle of a piece of foil (big enough to wrap around it).
Chop the lemon in 6 slices.
Put 3 lemon slices on top of each fillet.
Wrap the foil round the fish and fold the edges over the make parcels.
Put in the oven for 20mins.
Enjoy!

I usually serve these in their foil parcels as it's messy to extract them and it's a bit different.

Hey thanks Kerrie! It's similar in flavours to your (canned) salmon and lemon pasta which we love. Mmm. Making myself hungry here!

Hi,

I'm just eating my salmon bake leftovers from Sunday.
It's receipe I got from my Swedish mother-inlaw.

DILL SALMON BAKE

Take one whole salmon and soak for an hour in Vinegar
water (I fill up the kitchen sink)
Then rinse with clear water
(this process takes any fishy smell and taste out)

Put on a cookie sheet lined with tin foil
squeeze fresh lemon over fish
and sprinkle about 1/2 teas. of white pepper for taste
Then place a layer of fresh lemon slices over whole fish
and on top of that put a layer of fresh or frozen dill
to cover (you can't layer enough of dill)

Cover fish with another piece of tin foil and seal edges

Put in pre-heated over at 400 degrees for 30 to 40 mins.

Comes out moist and yummy.

Serve with fresh boiled potatoes or rice.

Pour a white dill sauce made with soy milk for topping.

Enjoy

Laurie

It's made by the Veat people I was telling you about. The ones who do the awesome "chicken."

It's the very last of their products.

Veat. Sure. But is veat as good for us as salmon? I mean, what about the omega-3 oil?
