Pineapple Angel Food Cake

This one is ridiculously easy and is a wonderful way to safely incorporate fruit into your diet. Since the pineaple is crushed and cooked, it's much easier to digest.
You need:
1 19 oz. can of crushed pineapple (juice and all)
1 box of instant angel food cake
Mix the two together (include pineapple juice) according to directions on the box. DO NOT add any other ingredients that the box tells you to!
Bake according to directions on cake box.
Serve with ultra low fat cool whip and enjoy!
PS - if you make it in cupcake tins, they make a great snack for work.

This sounds fabulous! I never would have thought of doing this. I always think of angel food cakes as being very touchy, so I'm afraid to fiddle around with them. But this I have to try! I wonder if this would work with some other types of canned fruit?

I've never had this cake not turn out. It is a tad difficult to get it out of a traditional angel food cake pan. Carefully run a knife along the edges and in the center ring, then lift the sides off and gently do the same along the bottom. Thank heavens, the cool whip will hide any minor mishaps (which with me happens a lot!)

Okay, I'll watch out for that. Can't do the Cool Whip though - I can't tolerate that any more than real whipped cream. Not sure if it's the fat content or just the artificial ingredients. Dessert whipped toppings are one of the few things I've never been able to figure out an IBS-safe recipe for.

I only use the Ultra Low Fat Cool Whip. Have you tried it?

Okay, you weight watchers out there. Good news! The Pineapple Angel Food Cake is only 2.5 points per slice at 16 slices. Use 20 oz. pineapple in its own juice. Haven't tried it yet, but I went to the grocery store today and bought the Angel Food Cake so I could figure the points. Let us know if anyone out there makes it.

HanSolo - this cake is one of the easiest I have ever made. And, it was so moist. Made it for desert last night for company, and even the men liked it. I put a 1/2 slice of canned pineapple on top with some cool whip. I froze the rest so I wouldn't be tempted to eat more. I hope it freezes well. Guess I'll just have to take a piece out and defrost it to see! Thanks, again, for the great recipe.
