Kree or Heather...can this be made safe??? ( Ice box cookies)

This is my mom's recipe...they are so yummy! I hope they can be made over to be safe! Here it goes!!

Ice box cookies!

1 Cup Shortening
1 Cup brown sugar
1 Cup confectioner's sugar
2 Eggs ( I know we can do egg whites or egg sub for this)
1 tsp. Vanilla
1 1/2 Cups flour
1 tsp. salt
1 tsp. soda
3 Cups oats
1/2 cup walnuts(chopped)

Cream shortening and sugars. Add eggs and vanilla. Beat well. Sift together flour, salt & soda, add to cream mixture. Stir in rolled oats and nuts. Mix well. From dought in rolls 1 to 1 1/2 inch in diameter. Wrap in wax parer, aluminum foil or saran wrap. Chill well. With sharp knife, slice cookies about 1/4 inch thick. Bake on ungreased cookie sheet at 350 for 10 minutes or until lightly browned. Makes about 5 dozen!

I have bad news, Steph... as far as I know most cookies can't be made safe without seriously changing their texture. I've never tried subbing applesauce in them, but I would imagine in a harder cookie like this it just wouldn't work. I haven't been able to adapt most of my family favorites, either, so I just make them once in a great while instead and allow myself one after a meal. I wish I could have better news, and maybe someone else will have some ideas!

OH dang, so subing soy margarine for the shortening wouldn't work? I guess fat is fat! It does make a lot of cookies so there not to bad fat wise. Maybe I'll do as you suggested and make them once in a while! Eat one after a safe dinner! I guess I could still replace the whole eggs with egg whites.

Oh, I didn't even notice that they contained 3 cups of oats. That's not as bad as I thought. I saw the 1 cup of shortening and the small amount of flour and went, yikes! But if you sub the soy margarine and egg beaters they really shouldn't be too bad for an occassional splurge.

Oh good, well would I just use one cup soy margarine for the one cup shortening?
