Granola Bars

Any of you have a good recipe for granola and granola bars?
The recipe can not have any peanut butter in it. Nuts are bad news to my whole body!

Isnt granola a no-no for Ibs-ers? If i recall, its packed with insolable fiber

I tried to respond earlier when I online, but after 20 minutes on the computer my kids want my attention. Imagine that?
I thought granola is okay if you make your own with oatmeal. My problem is my gronola doesn't stick together and I don't want to add more oil. My recipe calls for 1/4 oil and I think that is a lot.

Would it help to add fruit puree like apple sauce to sub for the oil?

Hi - You might be able to substitute honey for some of the oil and then bake the granola. That way it would stick together (I think) but be lower fat.

Barbara - I just got a recipe for Granola off Kingarthurflour.com but I'm afraid it's rather IBS UNfriendly. It uses shredded coconut, chopped nuts, 1/2 c oil (wow!), hulled sunflower seeds, and mixed dried fruits.

It's roasted in the oven for 1 hr at 300 or 1.5 hrs at 275, or 2 hrs at 250. The recipe makes 5 lbs.

You can probably really chop the nuts fine (like in a mini food processor) as well as the seeds. The oil, tho, could be a problem. Maybe cut down (like Heather said) on the oil and increase the syrup or honey. Don't know if fruit puree would work--might make everything too soggy. I've never tried to make it because it's not one of my favorites.

Trader Joe's has a FF strawberry/apple granole that I used to eat, but since following Heather's diet, I haven't purchased it and I don't know what ingr it has in it. I'm going to Modesto April 8 and will probably go to TJ's and will look at the label for us.

Sorry I couldn't give you a usable recipe.

i wonder... i would really try to make granola out of oatmeal too. i really miss those chocolate chip granola bars my mom buys

Sharon you were a great help. I love granola and my children do too. Store bought granola doesn't agree with me.
Check your personal e-mail tomorrow. I came up with a great Buckwheat chocolate chip cookie today, with I it isn't great for IBS. I don't want to post until I know how to change the ingred.
