Hi everyone! I thought I would post this for those of us who get tired of chicken recipes. McCormick has a HUGE line of spice blends (Thai, Greek, Mexican, etc.) and what I like to do is put a little lemon and lime juice in a baking dish, then select a number of different spice blends (depending on the number of breasts I have in the baking dish) and liberally sprinkle one spice blend on each of the chicken breasts. I put it in the oven at 350 degrees for a half hour or so (uncovered). I make a little rice to go with it. The great thing about this is that it is quick and you really can't get bored because there are so many different flavors available. We've even mixed leftover "Fun with Spices" chicken with pasta, risotto, and other rice flavors.
