Italian Herbed Chicken with Spinach & Penne Pasta

1 can chicken broth (or preferrably homemade)
1 teaspoon dried oregano leaves, crushed
6 sun-dried tomatoes (or 3 plum tomatoes, chopped)
1 tablespoon olive oil
1 pound boneless chicken breasts, cut into crosswise strips
2 cups sliced mushrooms
1 tablespoon all-purpose flour
1 cup packed coarsely chopped fresh spinach
4 cups hot cooked penne pasta
Grated soy parmesan

Place broth, oregano, and tomatoes in microwave-safe measuring cup. Microwave on high 2 min. Let stand 5 min. Remove tomatoes and cut up. Heat oil in lg. non-stick skillet. Add chicken and cook until browned, stirring often. Add mushrooms and cook until tender. Stir in flour and cook and stir 1 minute. Add tomatoes and broth. Cook and stir until mixture boils and thickens. Add spinach and pasta. Mix well and cook thoroughly. Serve with soy parmesan.

Serves 4. Pre/cook time: 25 min.

Well Bevrs I made it and it was delicious! Actually, I printed it and put it downstairs in the kitchen to prepare later and while I was still online, my husband ended up cooking it for me without me knowing. I thought that was so sweet. He has been so supportive. So we both enjoyed and thank you for the recipe.

No, I'm kidding -- my hubby's very supportive too -- but I'm VERY impressed! He made it for you while you were on-line? My hubby's always screaming for me to get OFF line!

That's great. I'll bet he serves you peppermint tea in bed when you're having an attack, right? And delivers the paper to you too? And gives you back rubs?

I know IŽm very lucky. He does bring me chamomile tea in bed and gives me messages almost everynight. He works from home. So we are together all the time. I dont work, well for him -kinda sect. stuff and keep the house up. Travel alot. He does alot too. I actually get mad when he cleans up because I feel like I should be the one instead since he works so hard. Hes funny. YouŽd love him. Everyone that meets him does. His name is Will.
You sound pretty lucky too. LUCKY WOMEN! Now if they could only take our IBS away......hee hee.
