Rice Pancakes

My brother was a allergic to so many foods as a child, everything we ate was rice flour,milk etc.
Here's a recipe we enjoyed as kids.

1/2 cup white rice flour
3 tbsp sugar
1/2 tsp baking soda
dash of salt
1 tsp canola oil
1/2 cup juice (any kind will work, but my mom used Juice from a lite can of pears)

Mix dry ingredients, stir in oil add liquid slowly, Batter will be thin. Cook on medium-low heat. Turn when pancake looks dry on top. You cann use your non stick spray to cook with. Top with your favorite syrup or spreadable jam.

Is it okay to use fruit juice to sweeten the pancakes or is it too high in fructose? Thanks,

I, myself, wouldn't chance it. I'm really unstable, though. Don't know if I'd try it anyhow though. Juices have higher fructose levels than the fruits. And pear juice is one of the higher fructose juices.

It might depend on how many pancackes the recipe makes. If the 1/2 cup was spread out over more pancakes, it may be tolerable for some. But with only that much rice flour, doesn't sound like it would make too many.
