Spinach Turkey Loaf

This is my old standby, a "knockoff" from my grandmother's 1941 "Better Homes & Gardens" cookbook. I've made it a million times, and yet my hubby keeps asking for more. I double the recipe, making two loaves, eat one and freeze the other.

TURKEY LOAF:
1 bunch fresh spinach
2/3 cup dry bread crumbs
1-1/2 pounds ground turkey
2 beaten eggs
1/4 cup grated onion
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon sage

PIQUANT SAUCE:
3 tablespoons brown sugar
1/4 cup catsup
1/4 teaspoon nutmeg
1 teaspoon dry mustard

Preheat oven to 350 degrees. Wash, rinse and dry spinach; chop fine. Mix with ground turkey, bread crumbs, beaten eggs, onion, salt, pepper and sage. Form into loaf and place in greased 5x8-inch loaf pan. Combine remaining Piquant Sauce ingredients and spread over top of loaf. Bake at 375 degrees for 1 hr.

OMG, what a keeper, and looks easy. (I only do easy.) I'm putting this one in my IBS recipe file right now!!!

Bet it would be good topped with a mushroom/cream sauce too.

Oooh, Kandee! A mushroom cream sauce? YUMMMMY! Do you have a recipe? I can't do anything without a recipe. Yeah, I think it probably WOULD be good with a mushroom cream sauce -- although the Piquant sauce is incredible and adds a lot of flavor.

I love this recipe. ENJOY!

If I find a recipe for one I'll post, otherwise I'd just make a roux and add a cream sub (soy or rice) and fresh mushrooms and spices......
Unfortunately I cook by the "seat of my pants" and rarely use a recipe when I get the bug to do something new.

Your sauce sounds great and likely the one I'd start with when I make.

Being a spinach and turkey lover this recipe just hit me just right!!!! (I'll be the only one eating it in my house)

Your hubby's got to be a jewel....to eat every thing you make.........(I have to cook 2 different meals when home).....mine's a Georgia guy and likes only fried, beef'd, with cheese, or however is the most unhealthy.......yet all his blood levels say he's healthy as a horse........must be good genes. Darn I hate people like that!!!!

Fried foods? Cheese? And the rotting carcass of dead cows? EW. How can he eats this stuff? And he's healthy? DAH-LING, would you REAAHLY want to be able to eat like him?

Is that the way they eat down in Georgia? Ew. And you have to cook TWO dinners? Wow -- your hubby wouldn't last long around this household! He'd be outa here so fast! Besides, has he ever TRIED any of "our" food? It's good stuff! Fix him an Antidepressant Brownie, but don't tell him it's one of "ours" -- and I'll bet you he won't kick you out of bed, Dahling!

Yep, my pic was gone for a while b/c the free image site I was using decided to no longer allow non-paying users to link to their pics. But Heather was kind enough to post this new one of me, which is more recent anyway!

I agree, Kandee, you're a saint for cooking a separate meal for your hubby! It makes me feel very lucky that my family is so tolerant and willing to eat all my "odd" dinners!
