Ice Cream Recipes?

One of the things I miss so much is ice cream.... I found some at the health food store -- but at almost 6 dollars for an itty bitty container -- it's going to make self control a must! I have a soft serve ice cream maker -- but the recipes don't seem easy to substitute -- they call for cream -- not just milk and eggs.... so I can't just substitute with soy milk.....

Does anyone know of any good recipes?

Hi - there's one for chocolate mint ice cream in Eating for IBS. They're ice cream sandwiches, but you don't have to make the sandwich part. You could adapt this recipe to any other flavor. The key to the rich texture is that you cook the soy/rice milk with a bit of cornstarch to just slightly thicken it. Once frozen, this will give you the "mouth feel" of a full fat ice cream. You can also freeze the chocolate silk pudding from the book - that makes an unbelievably rich fudge ice cream that no one ever believes is soy when they eat it.

Vanilla Soy Ice Cream new

Here's a safe ice cream I tried last Summer with great success! I'm not sure exactly how much ice cream this yields, but I made it in my 1 1/2 quart ice cream maker and there was room to spare!

1 cup powdered sugar
4 egg whites (or 1/2 cup egg beaters)
1 teaspoon cornstarch
2 cups soy milk
1 teaspoon vanilla extract

1. Put the eggs whites, sugar, and corn starch into a bowl; whisk the mixture together.
2. Heat the soy milk; slowly pour the hot soy milk into the mixture while continuing to beat.
3. Add the vanilla extract.
4. Gently heat the mixture until it thickens.
5. Let the mixture cool in the refrigerator for 3-4 hours.
6. Pour the mixture into an ice cream maker; make ice cream following the instructions of the machine.

heather how do i make subs on the mint choc. ice cream in book new

this is kind of a late post on this one. but heather how do you make the substitutes for the mint ice cream in the book? we finally bought an ice cream maker tonight and i can't want to make some that is belly safe and yummy

If I'm misunderstanding your question, I'm totally sorry - I'll just say that right away! I'm pretty sure the recipe Heather's referring to is in Eating for IBS, in which case it's already safe.

i guess i didn't really make sense ...oops. i'll rephrase it.

i have the book(loving it btw ) and i want to make other ice creams using the same recipe for the pep and chocolate one. so i want to know how to use that recipe to make other kinds of ice cream. heather said it was possible an i'm wondering how.
