Chocolate Tofu Pie

I use Heather's crust recipe of 8 crumbed graham crackers and 1T canola oil mixed together and formed into a pie crust.

Filling:
1 pound silken tofu
1/2 cup unsweetened cocoa
1 cup sugar
1 T vanilla extract
1/2 t apple cider vinegar

Preheat oven to 375.
Blend tofu in a blender until smooth. Vlend in other ingredients and pour into crust.
Bake for 25 minutes.
Refrigerate for 1 hour before serving.

I topped this with:

10 1/2 oz tofu
4 T sugar
1T lemon juice
1/4 t vanilla extract
1/8 r salt
1/8 almond extract
soymilk as needed

Place all ingredients in a blender and process until very smooth. Add more soymilk as needed if too thick. Place in a covered container, refrigerate until chilled.

After pie and whipped topping have chilled, top pie with topping.
It doesn't really taste like cool whip, but isn't too bad.
