1/2c shredded in bag carrots
1T minced jarred garlic
1T minced jarred ginger
3oz rice crackers
1 bunch scallions
20 oz package ground turkey
1T soy sauce
2/3c hoisin sauce, divided!
1/4t salt
1 egg white
1t-1T sriracha (aka Rooster sauce- hot pepper sauce)
Preheat oven to 375. Set out turkey in a large bowl. In a small pan sprayed with Pam, add garlic, ginger and carrots. Heat on medium heat until carrots are softened. Do not brown garlic too much- keep heat low.
In a food processor make crackers into crumbs. Add coarsely chopped scallions and finely chop (or do by hand). Add carrot mixture (you can deglaze the pan with soy sauce if desired- if there are browned bits of flavor in there), cracker mixture, soy sauce, 1/4c hoisin sauce, salt, egg white and Rooster sauce. Mix gently but thoroughly. Place mixture in 6 jumbo muffin cups or into mini loaf pans and top with remaining hoisin and more Rooster Sauce if desired. bake for 25 min for cups or 35 for pans. Let rest 5 min.
Note: Next time I might put finely chopped shiitake mushrooms in this.
