Slow Cooker POTATO, ONION & TOMATO GRATIN

POTATO, ONION AND TOMATO GRATIN
FOR SLOW COOKER

Here's a savory side dish from the south of France.

Olive oil cooking spray
1.5 to 1.75 lb russet potatoes, peeled and thinly sliced
6 cloves garlic, minced or pressed
2 tbsp dry thyme
s/p
1 lg onion thinly sliced
12 oz pear shaped roma type tomatoes, seeded, peeled and sliced
2 tbsp olive oil
3 tbsp dry white wine

Spray 3 qt or larger electric slow cooker w/cooking spray. Spread about one third of the potatoes in cooker; sprinkle w/third ea of garlic and thyme, then season to taste w/s&p. Add a third ea of the onion and tomato slices. Repeat layers using a third of the potatoes, onion and tomatoes for ea layer and seasoning ea layer of potatoes w/garlic, thyme, salt and pepper. Finish with a potato layer. Drizzle w/oil and wine. Cover and cook on low setting until potatoes in center of mixture are very tender when pierced (7-8 hrs). Makes 6 to 8 serv.

Per serv: cal 126, 3 g pro, 20g carbo, 5g total fat (1g sat), no chol, 11 mg sod.
