(Oven) Fried Green Tomatoes

A friend's dad just gave us 30lbs (!!!) of tomatoes, a lot of which were green, so I decided to take the opportunity to try something new... "fried" green tomatoes.

Green tomatoes, sliced about 1/4" thick (a little thicker is fine)
Egg sub to equal 1 egg
About 1/2 cup milk sub of choice
About 1 cup flour
About 1 cup seasoned bread crumbs*
Salt, optional

(Sorry the measurements are approximate... this is what I used for 4 medium tomatoes. You might need more flour and bread crumbs.)

Preheat oven to 450 degrees. Spray a large cookie sheet with cooking spray.

Whisk together the egg and milk in a shallow dish. Set the flour and bread crumbs out in individual shallow dishes.

Dip each tomato slice in the egg mixture, then flour, then again in the egg mixture, then in the bread crumbs, coating well all over. Lay them on the prepared cookie sheet in a single layer, not touching. Sprinkle with salt, if desired.

Bake for 20 minutes, turning once halfway through, until tender and browned.

* Before using seasoned bread crumbs, check the ingredients and make sure they're safe. If you can't find a brand that's safe for your tolerances, season up plain bread crumbs generously with herbs and spices to suit your tastes - onion, garlic, parsley, basil, oregano, paprika, celery salt - all of this would be good.

YAY!! Thank you!! I LOVE fried green tomatoes & haven't had them in so long! Thanks for coming up w/a recipe that's IBS safe. I would never have thought of baking them. I can't wait to try it!

OHHHH send some of those tomatoes my way!! I love them!! I was so mad that we finally put in a garden this year and the one thing that did not do well were my tomatoes. I only got about 10 good ones! I'll have to buy some and try this recipe. Could I use red ones instead??

Don't feel bad... my OWN tomato plants produced a couple dozen tomatoes, none of which got any bigger than a golf ball, and NONE of which would ripen! So I didn't really get any tomatoes from my own garden, either - I just pickled those, and I have no idea what pickled green tomatoes are going to taste like, LOL!

You could try this with red tomatoes, but make sure they're FIRM, and maybe bake them for about half the time. I don't know if you'll even be able to turn them halfway through - they might be too soft. But baked red tomatoes, with some chopped fresh basil on top, are really good.

...I might try cornflake crumbs instead of breadcrumbs. They came out good, but I was hoping for crunch, and you really don't get that with the breadcrumbs. But they were tasty! I've never had actually fried green tomatoes, so I didn't have anything to compare them to... I hope they work for ya!

When you say green tomatoes - are they a certain type that are naturally green when they are ripe, or are you talking about using red tomatoes that aren't ripe yet, so they are green?

They're unripe normal tomatoes, that are still green.

I was just at the local veggie and fruit market and bought some green tomatoes. Can't wait to try this!!!
