Banana Nut Bread

Ingredients

3/4 cup whole wheat flour (you can use white if nec)
1/2 cup flour
1/2 cup quick-cooking oats
1/2 cup sugar (use 1/4 brown and 1/4 white if you like)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 (very) ripe bananas peeled and mashed
1/2 cup soy milk
2 egg whites
1/2 cup chopped walnuts or pecans
extra oats -- as much as you want

Directions


Preheat oven to 350°F. Grease an 8-inch square baking pan.

In a large bowl, combine flour, oats, sugar, baking powder, baking soda and salt. Combine bananas, soy milk and egg whites in a blender or mix with an electric mixer in a medium bowl. Add to dry ingredients just to blend. Stir in walnuts, if desired. Pour into prepared pan and top with "extra oats" and bake for 30 minutes, or until done. Cool on a wire rack.

I made this today, adding 1 T vanilla and 2 t cinnamon -- turned out really good! I also broiled the top for maybe a minute... the oats on the top got brown and toasted...

This sounds yummy. I love banana bread and so I love trying different recipes for it. Just out of interest what flour combination did you use and did you go half/half with the sugars?

I use the recommended wheat combo (though i may stop b/c i think wheat may be bothering my ibs), go half and half w/ the sugars, and make sure not to buy bananas that are too big, becuause than it won't turn out... if you are interested in other really good recipes (i collect banana bread recipes), you can e-mail me at shannak@mail.utexas.edu
