Bread pudding

4 eggs (1 cup egg beaters)
2 cups milk (soy orignal or rice)
1/3 cup sugar
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp salt
2 1/2 cups bread cubes ( 3 1/2 slices or sourdough)
1/3 cup Raisins (optional)

Beat together eggs, milk,sugar,cinnamon,vanilla,salt.
Place bread cubes in a 8x1 1/2 inch round baking pan. Sprinkle raisins over bread.Pour egg mixture over all.
Bake in 325 degree oven for 40 to 45 minutes or till knife inserted comes out clean. Cool slightly. serves 6

this reminds me of me grandmother. we had this together quite a few years ago. it was snowing outside, and so cold... but the bread pudding was warm and soft! realy comfort food.

Thanks for sharing this! My old bread pudding recipe had butter, so it's great to have a safe alternative!

Thanks for finding this recipe great. I found it in one of my cookbooks from better homes and garden, it was a wedding gift some 17 yrs ago. I going to have some this weekend.
My mom loves this and I can't wait to share it with her.
She's IBS C. My mom is a cooker and so am I. I love this board and all of the good recipes. Enjoy. Warm and filling.

Hey I just saw a recipe for chocolate bread pudding and thought hey we could add it to the Bread pudding recipe by adding unsweented cocoa to the soy or rice milk. It even suggest to add some chocolate chips (vegan would be good).

Thanks for sharing this recipe. We've made it twice in the last week. I love it. I cheated and used whole eggs though. I don't know if the raisins are intentionally not mixed with the eggs and milk so they're dried out more (I''m new to IBS diet), but they were juicier when added to the mixture then poured over the bread.
