Hi guys,
Made potatoes this way last night and I loved them, so I thought I would share the recipe. I think new potatoes would be good, but we didn't have any so I used white potatoes.
- Wash and slice potatoes into chunks - Parboil potatoes for 10-15 minutes until they are slightly tender (depends on the size on the potato peices, they shouldn't be close to mushy) - Drain potatoes, rinse in cool water and put into a plastic bag. Shake with Olive Oil, some minced garlic and salt-free italian seasoning. - Put potatoes in alluninum foil and squeeze half a fresh lemon over the coated potatoes. - Wrap potatoes in the foil, and then do a second layer of foil - Put the foil package on the BBQ and cook for 10 minutes. Turn package over, and cook for another 10. - Eat!
Our turned out really well. I think I could have cooked them for longer if I wanted them "crispy" but they were yummy.
I made these with grilled salmon fillets (with chipoltes, olive oil and some other spices, very yummy too) and asparagus and carrots. Very good meal!
