Had this last night and it was amazing!!! Can't wait for the leftovers at lunch!
Greek-Inspired Pasta
8oz. penne pasta - cooked according to manf. directions 3 plum tomatoes, chopped 2 garlic cloves, minced 20 slices turkey pepperoni (or more or less to taste) 1 can (13oz) artichoke hearts packed in water, drained and chopped 1 can (2.25oz) sliced black olives, drained 1/4 tsp. onion powder 1/4 cup feta cheese, or substitute Olive oil (a couple tablespoons) Black pepper to taste
Place pepperoni on a paper towel lined plate and top with another paper towel. Microwave on high power for 45 seconds to release some of the oils. Chop pepperoni coursely into quarters.
Combine all ingredients except the pasta and feta into a large skillet. Saute on medium heat until warm. Add the cooked pasta and the feta cheese. Drizzle with olive oil and toss to combine.
That's it!! So easy and so delicious!

I took the saute from this recipe and used it as a pizza topping last night (without the pasta of course). It came out DELICIOUS!!!

This sounds wonderful, but where did you find turkey pepperoni?

It was in the regular grocery store in the section with the other pepperoni. I think the brand is Hormel.

What kind of cheese would some of you use in place of feta? I love feta but it's not safe, right?

Feta is dairy - I tolerate it ok, but yes, it is a trigger. Heather has mentioned before that there is such a thing as soy feta....I would try that. Maybe someone else can tell you where to find it....
