Herb-Braised Chicken With Tomatoes and Mushrooms

I made this last night for dinner and it was yummy! I have the leftovers today for lunch. I am going to heat it up and put it in a roll to eat as a sandwich - YUMMY!

Herb-Braised Chicken With Tomatoes and Mushrooms

4-6 servings

2 lbs boneless skinless chicken breasts
2 slices bacon, cut into 1 inch pieces I used Turkey Bacon
8 ounces baby portabello mushrooms, sliced
1 large sweet onion, sliced thin
1 1/2 teaspoons dried basil
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 (14 1/2 ounce) can diced tomatoes, drained

In a large, deep skillet or Dutch oven, cook bacon on medium for 4 minutes or until lightly browned but not crisp; turn frequently.
Add mushrooms and onions; stir occasionally and cook until onion is tender, about 8 minutes.
Mix the seasonings together and sprinkle over both sides of chicken.
Add chicken and tomatoes to pan. I also added about a 1/2c of chicken broth here
Bring to a boil and stir, getting up all the browned bits.
Reduce heat to low, cover and simmer for 15 minutes.
Turn chicken and cook for another 15 minutes, stirring occasionally and spooning sauce over chicken.

I served this over white rice

Yummy! I made this last night for dinner and it was great! Plus I had the leftovers for lunch. Thanks for a great recipe!!! I served it with Jasmine rice!

I didn't add chicken broth, instead I added the liquid from the canned tomatoes. I think next time, I'll try adding wine instead - maybe white one time and red the next. And I used the baby bellas, but I think it would be just as yummy with plain, old white button mushrooms. I served this over noodles.

Or is there enough in the tomato? Did anyone make a side dish for this or was it filling on it's own?

Looks easy and good. I only make chicken 2 ways...and I'm getting quite bored with it!

Tha only thing that looks "iffy" is the oregano. I have read where lots of people have problems with that for some reason...so, I have been too scared to try it!

Hi Beth - I didn't add a side dish to this. I served it over rice. You could certainly add a side dish - a lot of veggies would go nicely with this.

I can't take credit for the recipes I have been posting lately - none of them are my own!!!
