Lemon Garlic Chicken

Lemon Garlic Chicken
4 Servings

4 (5 oz) chicken breasts (boneless & skinless)
1 clove garlic, minced
1/2 c FF chicken broth (I use FF reduced sodium)
1 T lemon juice

Using nonstick skilled sprayed with cooking spray, slowly sauté garlic over low heat. Add chicken and cook over medium heat about 10 min. or until brown on both sides. Add broth and lemon juice. Heat to boiling and then reduce heat. Cover and simmer 10-15 min. or until chicken is done. Remove chicken and keep warm. Cook or reduce remaining liquid in pan, around 3 min. Pour over chicken and serve.

Sodium 432.7 mg (probably less if using reduced sodium broth)

Mags - you New Jersey-ites are great! Thanks for the chicken recipe. I just bought some boneless and skinless breasts and I'll have to try them this weekend.

Sharon - I hope you like it. I tried if for the first time last night, and I liked it. Especially because it was easy, & I love easy on weeknights! I thought of you as I was typing it, and I thought you were going to say "Just one clove of garlic!" lol Let me know how it comes out.

Mags - Yes, you are right. I'm going to put in more than 1 clove of garlic. Besides, I use the large jar of minced or chopped garlic and it's hard to tell how much 1 clove is after it's minced, so I just keep adding. It's good for cholesterol, right???

Mags - We had the Lemon Garlic Chicken last night and it was pretty good. But, I did add more garlic and a bunch of cooked onions and mushrooms. I just don't have good luck with chicken breasts on top of the stove. To me it was not tender (it was cooked enough--maybe too much). I have better luck with them in the oven. I have a WW recipe that always comes out tender and juicy. Maybe I should post it for everybody.

Hey Sharon! Sorry it came out tough for you. I guess I should have mentioned the fact that I always flatten chicken (whether it calls for it in the recipe or not), because I've found they come out more tender & cook more even, then I always end up cooking it a little less, since it's a little thinner. Besides - there's nothing like venting some aggressions on some meat...lol

So, about this WW recipe, is that the apricot chicken one you posted? If so, I've already printed it, and as usual, look forward to trying one of your recipes.
