CRISPY CHIPOTLE CHILE BAKED CHICKEN
2/3 cup instant mashed potato flakes
3/4 to 1 tsp chipotle chile pepper
1/2 to 3/4 tsp *Johnny seasoning salt
3 lb skinned chicken breasts
I can't believe it's not butter spray
Put potato flakes in med bowl, set aside. On a plate sprinkle chicken with Johnny seasoning & chipotle chile pepper, rubbing it all over both sides. Spray chicken w/spray I can't believe it's not butter and then roll in potato flakes to coat. Place on cookie sheet sprayed with cooking spray.
Bake at 375 for 45-60 min or until breasts are fork tender and juices run clear.
*Johnny seasoning salt=(crystalline salt, pepper,paprika, granulated garlic, & spices)

Shell - that sounds great! My fiance will love it! I bought ground chipotle for one of Heather's recipes, and my fiance has become addicted to it - it goes on everything! LOL
One question - what's Johnny seasoning? I've never heard of it. Is it just a season blend? Can you sub something else?

I just edited the recipe.....thanks for pointing that out...not everyone would know that Johnny's was a blend.

They have a new chipotle Tabasco sauce: web page
I bought a bottle for Chris this morning at the store and surprised him with it when I got home. He's already used it on his eggs right after I gave it to him. He gave it a thumbs up!

I've seen it but did not buy it because I had already bought a bottle of regular hot sauce the week before...I'll try it next.

I think I'm gonna make this one for dinner tonight.... Oh, the things we do to make CHICKEN different from one night to the next...LOL
*Note: if you read this whole thread... Mags mentions her "fiance" note the date of that post was many moons ago and she is no longer with that guy! LOL She has MIKEY now... and I bet he would like this two....Mikey likes everything....LOL

This tasted SO good.... I had forgotten how much we liked it last time I made it... will make again for sure!!
