Lemon-Basil Tuna Pockets

If you can handle the IF, this tuna salad is a great alternative to a mayo-based one.

2 (6 oz) cans water-packed tuna, drained
1/2 cup chopped celery
1/4 cup sliced green onions
2 tablespoons chopped fresh basil
2 tablespoons fat-free Italian dressing
2 tablespoons lemon juice
1 tablespoon water
1/4 teaspoon lemon-pepper seasoning
1 clove garlic, minced
6 green leaf lettuce leaves
6 tomato slices, 1/4" thick
3 6-inch pita bread rounds, cut in half to form pockets

Combine the first 3 ingredients in a bowl, mix well. Combine basil and next 5 ingredients, mix well. Pour over tuna mixture, stir well. Cover and refrigerate at least 1 hour.

Just before serving, place 1 lettuce leaf and 1 tomato slice in each pita half; spoon tuna mixture into pitas. Serves 6, 141 calories and 1.1g fat per serving.

Obviously, the pita/lettuce/tomato is just a serving suggestion, but changing any of that will change the calorie count, of course.

Ok, I have searched high and low for a Fat-Free Italian dressing that doesn't contain HFCS. Where are you guys finding this and what brand is it? Or do you just use dressing with the HFCS in it?

It's not technically fat-free - it has 2g fat per serving - but it's the only one I could find up here that doesn't have HFCS in it.

What is HCFS? I'm lost with all these abbreviations... is there a dictionary some where?

Hmm, is it possible that they use different recipes in different areas, b/c even the 'Just2Good' Italian dressing has HFCS in it where I live. And I checked on the website to be sure, and it lists it as an ingredient there too! HERE You're just gonna hafta mail me some of what you got!

I never would have noticed, because thankfully, I'm not the least bit sensitive to HFCS, so I don't even check the labels for it anymore.

Sorry about that!

Try bumping up to a "light" dressing. Some of them have 5g fat per serving, so you have to watch how much you use, but you might be able to find one that doesn't have the HFCS in it.
