Low-Fat Snickerdoodles (w/ photo)

Low-Fat Snickerdoodles
(Makes 60 cookies)



These may not be exactly like my grandmother's snickerdoodles, but they're a great substitute considering that they contain 1/3 of the fat! These cookies are only 21% fat. They're puffier and more cake-like than the traditional snickerdoodle, but have a great flavor.

1/3 cup soy margarine, softened
1 cup sugar
3 egg whites
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2/3 cup soymilk soured with lemon juice or vinegar
2 teaspoons ground cinnamon
2 tablespoons sugar (I used 1 Tbsp red and 1 Tbsp green sugar and mixed each with 1 tsp of the cinnamon in separate bowls to make these Christmasy)

Preheat the oven to 400 degrees.
Spray a baking sheet with nonstick cooking spray and set aside.
Mix together the butter and sugar, add the egg whites and beat well.
In another bowl, combine the flour, cream of tartar, baking soda and salt.
Add the buttermilk and the dry mixture to the butter mixture, and stir to combine.
At this point, I needed to chill the dough for an hour because it was way too sticky to roll into balls. Even when I took it out, it was still a messy process... but worth it!
Combine the cinnamon with the 2 tablespoons of sugar. I needed to use twice as much of the cinnamon/sugar mix to accomodate all the cookies.
Taking a teaspoonful of dough at a time, roll the dough into a ball in your hands, then roll it in the cinnamon-and-sugar mixture.
Place on the prepared baking sheet 2 inches apart and bake in the preheated oven for about 8 minutes, or until lightly browned.

First, I just wanted to say that these look wonderful! What a great recipe, I can't wait to try it. However, I was wondering, since I'm new to IBS Safe cooking, what brand of soy margarine would you recommend? Any brands that can easily be found at a large-chain grocery store would be greatly appreciated.

I have to ask...what on EARTH is a Snickerdoodle?

It is like a doughnut, or is it chewy? Sorta cake-like?

Maybe it's an American thing...

I suppose maybe it is an American thing! They're just a type of cookie. I think the defining characteristic is that they're rolled in a cinnamon and sugar mixture, which gives them that brown, cracked look on top. Well, normally they're more brown... the colored sugar kind of hides that. They're one of my favorites.

I just made some today from a recipe out of a Pillsbury cookbook my grandma gave me years ago. My didn't have milk in them and I did make them with butter since I made them for a cookie exchange that most likely will not have anything I can safely eat. Anyways the book says:

In the nineteenth century "snickerdoodle" was a nonsense word used to describe any quickly made confetion.

Okay now I need to get some more cinnamon so I can make these. I love these cookies.

Do you think Smart Balance Light would work in these? (I bake with it in breads all the time -- even though it says not to) but the cookies may need the higher fat....

Made these last night and they turned out really good. However they were still really sticky after an hour in the frig. I had to put flour on my hands after each time I rolled a oookie. A lot of work but the end result was good.

When I saw this on the recipe board I got so excited -- these are my absolute favorite cookies of all time!! I made them this past week and they have been wonderful I even shared them with my frisbee team and the guys kept on coming back to the box for more. Anyway, thank you so much Kree -- I will certainly be keeping this recipe as one of my staples!

I just made these this week for Christmas. I decided on forgoing the rolling into balls though because it seemed like it would be a pain. So I just spread the dough out into a baking pan (like your making brownies). Covered with cinnamon sugar, cooked, cooled,& cut into squares. My family said they taste like a cinnamon roll.

I made these to imstead of balls I just use 1 tablespoon of cookie and droped it on a sheet sprikle them with the cinnamon and sugar and bake them my family loved them!
