Shell's Acorn Squash



Pre-heat oven to 375

If it is too hard to run your knife through the squash, here is a tip…. Place it in the microwave for 2-3 mins, turning over after 2 min.

Scoop out the seeds and stringy stuff from the center and dispose of it.

I personally only cook one half at a time since I'm the only one who likes squash, so at this point I place one half in a ziplock bag and put in the refrigerator for later in the week and use different seasonings depending on my mood that day. Or you can bake both halves and just reheat it later.

I place one half on a paper towel so I can make a mess while seasoning and not worry about clean up.

PER HALF

Spray with cooking spray (I used butter flavored Pam) you could also use soy margarine.

Sprinkle lightly with black pepper, cinnamon, & ground ginger.

Fill the center with 2 tablespoons unsweetened applesauce and 20 raisins (I used golden).

Sprinkle all over with 1-1/2 teaspoon light brown sugar and just a little salt.

Spray with cooking spray again.

Place on cookie sheet (I line mine with foil for easy clean up)

Bake uncovered 35-40 minutes or to your personal liking.

Ooh, looks fabulous! I love acorn squash. I'll definitely have to try it this way.

Thanks Kree.... I liked it this way because it was not TOO sweet....sometimes the maple syrup or honey or too much brown sugar can make it more like a dessert. Growing up...Mom would always make acorn squash with meatloaf and just used butter and salt....very simple, very yummy!
