Modified only slightly (sub'd chicken for pork) from a recipe from one of my 1950s cookbooks...
6 boneless skinless chicken breast halves (about 2lbs) 1 tsp salt 1/8 tsp pepper 6 unpared apple slices, about 1/4" thick 1/4 cup light brown sugar, firmly packed 1/2 cup raisins 1 tbsp grated orange peel 1/4 cup orange juice 1 lg can sweet potatoes or yams, drained 1 tbsp safe margarine
Spray a large skillet with cooking spray and preheat. Add chicken breasts; season with salt and pepper. Cook over medium-high heat until well browned on both sides.
Place an apple slice on each breast. Sprinkle with sugar, raisins, and orange peel. Pour orange juice and 1/3 cup water around the chicken; simmer, covered, over very low heat for 15-20 minutes.
Arrange potatoes around chicken pieces. Dot with margarine. Simmer, covered, 10 minutes longer. Serves 6.
