Zucchini Bread

I finally have a recipe to share! It's not only delicious and moist but also colorful!
Zucchini Bread (makes 2 loaves) 3 eggs (Egg Beaters) 1.5 cups of sugar 2 cups grated zucchini (don't peel) 3/4 cup canola oil 2 teas vanilla 3 cups flour 1 teas baking powder 1 teas baking soda 1 teas salt 1 small can crushed pineapple, drained well 1 small can of maraschino cherries, drained and chopped
Mix first five ingredients in a large bowl. Set aside. In a medium bowl, mix the flour, baking powder, baking soda and salt. Add half of the dry mixture to the zucchini mixture and mix. Add the chopped cherries and pineapple and mix. Add the rest of the dry mixture and mix well. Pour into two bread loaf pans sprayed with Pam and bake at 325 for 1 hour or until brown. (NOTE: ovens will vary. In my oven, it only took 45 minutes.)

That looks unique and yummy! Thanks for sharing, Kristine! My only comment is that it has an awful lot of canola oil for 2 loaves. I would suggest subbing applesauce for at least 1/4 cup of the oil. Other than that, looks great! I'll have to try this one.

Yes, I agree about the canola oil. My tummy was okay with it, but using part applesauce would work much better. I hope you enjoy it. Kristine
