Greek Style Orzo Salad With Balsamic Vinaigrette (Makes 6 servings)

This is an amazing recipe that flower7 from Recipezaar actually created for a recipe contest. The vinaigrette definitely makes the salad. It's so flavorful!
Vinaigrette 1/4 cup balsamic vinegar 1 1/2 teaspoons dried basil 1 1/2 teaspoons dried oregano 2 tablespoons Dijon mustard 1 1/2 tablespoons olive oil 1 tablespoon water 1/8 teaspoon black pepper 3 garlic cloves, minced
Salad 1 cup orzo pasta, uncooked 1/2 cup sliced kalamata olives (I omitted because I'm not an olive fan) 1/2 cup chopped fresh tomatoes 8 ounces garbanzo beans, drained and rinsed 5-6 ounces feta soy cheese (Galaxy Foods makes a feta Veggie Crumbles--otherwise I bet you could sub some soy parmesan)
1. Combine vinaigrette ingredients in a small bowl and whisk to combine. Set aside. 2. Cook orzo according to package directions. Drain and transfer to a medium-size bowl. 3. While pasta is still hot, stir in the rest of salad ingredients and dressing to taste. 4. Salad is good immediately while still warm, or also chilled or at room temperature.

Oh wow! I made this for dinner tonight. It was my dad's b-day and everyone loved it! Even my very picky toddler son ate it and liked it. This will be my new favorite salad to eat. I can't wait to have it for lunch tomorrow!
