Sweet Potato Fries

1 tsp. course salt
1/4 tsp. red pepper flakes
4 sweet potatoes peeled
1/4 c. olive oil
1 tbsp. chopped rosemary
Slice potatoes in half lengthwise, then cut into 1/2" edges. Put in bowl. Add remaining ingredients. Toss. Put on greased cookie sheet, single layer. Bake 500F, 10 min., turning once. Serves 8.

If I made these, I'd either spray the potatoes with nonstick cooking spray or use an egg white in place of the olive oil, to cut down on the fat in the recipe. Or maybe I'd use just a tablespoon or two of olive oil, but not 1/4 cup.
