Im not much of a cook and tired when I get home from working all day, any quick dinner ideas?

2 of my favorite recipes I have come up with:
Hoisin chicken pizza:
1 pillsbury pizza crust put on a cookie sheet
1/2 bag baby spinach (coarsely chopped if possible)
1/2 jar hoisin sauce
1 package or so sliced mushrooms
a couple cooked chicken breasts sliced or diced (can use leftover chicken or any cooked frozen or prepared chicken from the store)
salt and garlic to taste
Put the hoisin sauce on the pizza, top with spinach, mushrooms and chicken and garlic and salt. Cook in preheated oven according to directions on pizza dough can.

Indian chicken wraps with mango salsa
4 chicken breasts, sliced
flour tortillas
purple onion, sliced
Patak's tandoori marinade
Patak's mango salsa, mild
Put the marinade sauce on the chicken. heat a saute pan and add Pam. Throw in onions and then chicken with sauce, cook until done. Put on warm tortillas with some mango salsa. Serve with rice and veg. Can put chopped romaine on the wraps.

How about spaghetti squash? For me, I'd just quick steam red swiss chard leaves (not stems) and puree probably adding either zucchini or a huge carrot in the pot or even some green beans and fold that in for a sauce. Sea salt. A little Nakano seasoned rice vinegar or lemon juice and zest. If you like tomato go for it and just bypass all of the above. Also, spinach can be substituted for the chard. It's so flexible.
You can add further elements too, i.e. safe protein. Saute some funky mushrooms in some wine...the alcohol will evaporate. Throw in any herbs you enjoy. Fresh sweet basil?
A big bowl or two of rice noodle soup with any desirable accents, i.e. chicken or shrimp, maybe some carrot slivers. I toss in shitake mushrooms, ginger, whatever!

Noodles/pasta and safe veggies?

I'm just thinking about FAST and something you don't really have to think to hard about and can just cook intuitively when you're a tired and hungry zombie!!!

Portabella mushrooms are great, too...and FAST! Marinate as you would enjoy a steak--balsalmic and soy sauce or if avoiding soy, balsalmic and veg. broth and grill! Pam spray the grill. Make sure you remove the stems. Or, just chop them up finely, saute or stick in the oven at 400 degrees for around half an hour. Include the simmering base. If you do tomatoe sauces, they're a lovely aromatic accompaniement/simmering base...wine works too. Serve with sf, i.e. fresh appropriate bread/rolls, english muffins, noodles/rice, etc. etc.

There are a lot of recipes on the recipe board that are quick and easy. Here is a web page where Lana asked for easy quick meals. Maybe you will find something you like there. It's a start.

Your username caught my attention. My oldest daughter's name is Madeline and we call her Maddie. We even spell it the same way .

Why don't you try some crockpot recipes? Prepare them as much as you can the night before, throw them in the crockpot in the morning, turn it on and voila! Supper ready when you get home! There's tons of crockpot recipes on this website. Go take a look.
