Spinach Parmesan Rice Bake

Modified this recipe from one I found on recipezaar, since I had a bunch of frozen spinach in the freezer, and now that Mac lives with me, he's on my case to eat more in general, and to eat more fruits and veggies. The original recipe said it made 8 servings, Mac and I ate about half the pan for dinner last night ourselves, just to give you an idea.

Spinach Parmesan Rice Bake

2 12 oz packages frozen spinach
2 cups cooked rice (we used some jasmati I had)
1 cup shredded rice cheddar cheese (or less if you want less fat, or less cheesiness)
rice parmesan cheese, to taste
¼ cup chopped onions (I just used some minced onion from the spice rack)
3 cloves chopped fresh garlic
6 egg whites, slightly beaten
1 cup rice milk


1 Set oven to 350 degrees.
2 Grease a 13 x 9-inch baking dish.
3 Boil the frozen spinach for 5-7 minutes; drain well, squeeze out any excess moisture by hand.
4 In a large bowl, combine all ingredients with a wooden spoon (adding more spices to suit taste).
5 Transfer the mixture to the prepared baking dish.
6 Sprinkle with Parmesan cheese.
7 Bake, uncovered OR covered for 25 minutes, or until set (overbaking of this casserole, causes a heavier texture, if you prefer a lighter-textured casserole, then bake JUST until set).

This sounds like something my family would enjoy but thankfully they can eat anything...they won't enjoy the substitutions!

2 (330 g) packages frozen spinach, cooked,and hand squeezed to remove excess moisture
2 cups cooked white rice or brown rice
1/2 cup melted butter
1 1/2-2 cups shredded cheddar cheese or swiss cheese
3/4 cup grated parmesan cheese, to taste
1/4 cup chopped onions
1 tablespoon chopped fresh garlic, to taste (optional)
3 eggs, beaten
3/4 cup milk or half-and-half cream
1/4 teaspoon cayenne pepper, to taste (optional)
salt and black pepper
1/4 cup grated parmesan cheese, for topping

1. Set oven to 350 degrees.
2. Grease a 11 x 7-inch (that's what I use) OR 13 x 9-inch baking dish.
3. Boil the frozen spinach for 5-7 minutes; drain well, squeeze out any excess moisture by hand.
4. In a large bowl, combine all ingredients with a wooden spoon (adding more spices to suit taste).
5. Transfer the mixture to the prepared baking dish.
6. Sprinkle with Parmesan cheese.
7. Bake, uncovered OR covered for 25 minutes, or until set (overbaking of this casserole, causes a heavier texture, if you prefer a lighter-textured casserole, then bake JUST until set).
8. Note: for a more fluffier texture casserole, 4 eggs may be used.
