Tex-mex potato salad (mayo free)

This is a wonderful potato salad to take to picnics because it has no mayonnaise in it and does not have to be kept chilled. And in my opinion, it tastes even better than the traditional gloopy white concoction If you can't handle the corn or olives, omit. Also, I was thinking of replacing the vinegar with lime juice next time for a little citrus kick...

TEX-MEX POTATO SALAD

1 1/2 -2 lb. potatoes
1/4 cup oil
1/4 cup water
1/4 cup white wine vinegar
1 Tbs. sugar
1&1/2 tsp. chili powder
1 tsp. seasoned salt
1/2 tsp. garlic salt
1/4 tsp. each cumin and hot sauce
1 - 12 oz. can seasoned corn
1 - 2&1/2 oz. can sliced olives
3/4 cup sliced green onions

Cut cooked potatoes into 3/4" cubes. Meanwhile, stir together oil, water, vinegar, sugar, chili powder, salt, garlic salt, cumin, and hot sauce.
Pour over warm potatoes and mix well. Cover and refrigerate until cold. Then stir in corn, olives, and green onions. Cover and refrigerate as long as two days.

Wow! This looks great! What a neat alternative to the traditional tater salad! I can see it working well with cold pasta too. What do you think, steather?

It is great! I have a hard time eating it in small portions You know, as I was posting the recipe I was thinking how similar it is to pasta salad...just with a more Mexican flair as opposed to the usual Italian dressing. So I bet it would work well on pasta too!! If you try it, let me know Alicia!

I don't know. It looks so good, I think I'm going to have to try it with the potatoes first. I will let you know if I try it with the pasta, though.

This sounds good. When I first saw it I was thinking too bad there is corn because corn doesn't like me but then I realized I don't like olives either. Of course back when I could eat potato or macaroni salad I have always ate around celery and peppers and just at the potatoes so what would the difference be, right? lol I know my husband would like it and the kids probable would too. I will definatly try this.

Steather! Going to make this for our Canada Day celebrations and long weekend! I can't wait. I may just throw that squeeze of lime in you were talking about. Off to get the ingredients! I forgot to post my review, I made it a few weeks ago for my family and we really liked it. Definitely a good alternative to regular mayo potato salad.
