Chicken Fricot: 4 chicken breasts, 5c. cubed potatoes, 1 tbsp chopped green onion, 3 onions chopped, 6-8 cups chicken broth(start at 6) Brown chicken breasts using a little suy margerin. save brownings to fry onions.(can add a little broth if needed). In a pot add chicken(cubed),onions and broth; boil for 1/2 hour on med., reduce heat and simmer for an hour add potatoes last 1/2 hour Ckicken Spaghetti: 6 chicken breast(whole), 1 can tomato paste, 1 can tomato soup 1 large can tomato sauce 6 cups water, 1tsp oregano, 1tsp crushed garlic salt and pepper In large skillet or pot;brown chicken, remove, mix tomato ingredients into skillet. Add water and spices. Bring to a boil, then simmer for 2 to 3 hours, adding chicken for last hour. cook spaghetti and mix into sauce.

I make this fricot, but I just chop up one chicken breast, 2 or so carrots, slice a celery stalk, dice up one potato, and one onion. I slightly brown the chicken with a little summer savory in my pot (one or two minutes), then put in JUST enough water to cover. Bring it to boil, lower to simmer, and cook about 1/2 hour to 45 minutes. I add salt and pepper to taste at serving. I freeze this to have handy. It is delicious and simple. The summer savory might be a little hard to locate, but is really key to a lovely light broth.
