simple paella:

use a roaster pan or a covered casserole dsh
proportions to need:
rice broth (chicken preferrably, but it works with vvegetable broth too) (1.5 cups broth to 1 cup rice) carrots onion garlic saffron (a few threads) chicken fish (corn, peas, beans, any other vegetables to taste)
mix spices and broth in pan- gently powdering the saffron threads stir rice and vegetables through layer on chicken (if you are going to do a lobster or larger piece of fish you may want ot add it at this point, otherwise, add fish 50 minutes into cook time)
bake at 350 with lid on for 1 hour. remove lid and brown for 10 minutes (turning heat up if needed, or even switching to broiler) (if using skinned chicken and fish, this is optional- otherwise it browns the skin)

its paella- traditionally its a "garbage pail" dish- whatever leftovers were on hand.. its made with sausages, etc... I hae done all fish, and othertimes no fish... just whatever was on hand and whatever the crowd I was feeding would eat.
