This is what I did for lunch today, and it was tasty and pretty filling.

I cooked together 2 servings' worth of medium shell pasta and 1 cup frozen veggies (peas and carrots). Drained, rinsed with cold water, put 'em in a bowl. Add a can of tuna, drained. (Leftover chicken or cooked seafood of any kind would be good too.)

Then I mixed together 2 tbsp lite mayo and 2 tbsp safe Italian salad dressing, poured it over top, and mixed everything together. Season to taste with salt and pepper, and then chill.

Makes 2 servings, and is good with soy parmesan sprinkled over top.

Yum. Have you seen the salmon in pouches like chicken of the sea tuna? I had some coupons but have not bought it yet. (I thought it would be good since I don't like tuna. but DH will probably eat it instead of me. He is a grizzly bear. )

I haven't tried it yet, though. I keep meaning to, but every time I'm actually in the store, I forget. Head like a sieve! If you try it first, let me know what you think... I'm just picturing it having the same dry texture as packaged tuna, and that doesn't seem too appealing. Heh.

Yummy, isn't it? Sometimes adding garlic salt, herbs and mayo instead of the dressing and mayo is nice too!
